Extra Virgin Olive Oil

In late October and early November we harvest the olives that grow in the grove of ancient olive trees in the grounds of Pian del Colombaio, to create our Single Estate Extra Virgin Olive Oil.

The Olivastra trees that grow in our olive grove are 300 years old, and yield an oil that is creamy in texture and lingering on the palate, with a strong yet fresh peppery finish. Cold clear winters ensure that our trees are naturally pest free, thus ensuring that the oil we produce is organic, as pesticides are not necessary.

Each year the olives are hand-picked by our family and friends and immediately cold pressed at the local frantoio, Frantoio Franci, who has been awarded the best oil and mill in the world by the World Olive Oil Federation.
